Ingredients:
Okra - 6 to 8 nos
Thick Buttermilk/curd - 1/2 cup.
Shredded Coconut - 1/2 cup
Green Chillies - 3 to 4
Red Chillies - 2
Cumin & Mustard Seeds - 1 tsp
Turmeric Powder & Fenugreek Seeds - 1/4 tsp
Coriander Powder/Seeds - 1 tsp
Corn Flour or Rice Flour - 2 tsp
Coriander Leaves
Salt to taste
Preparation Method:
1) Cut Okra into medium pieces and fry it in 2 tsp of oil till color changes and add Fried Okra,Turmeric Powder to 4-5 cups of water and boil for 10 mins.
2) Grind coconut, green chilly, coriander powder, cumin seeds, corn flour, curd into a fine paste.
3) After Okra is cooked well add the paste and mix it well and boil in simmer for 10 mins.
4) For seasoning heat oil in a pan add mustard seeds and fenugreek seeds after they crackle, add red chillies and coriander leaves.
Tips:
Instead of Okra vegetables like Brinjal,Drumstick,Pumpkin Cucumber can also be used.
